A little green for your morning breakfast?

Last week I shared a new favorite porridge variation (carrot infused). This week I'm sharing my spinach infused oatmeal. If you like a bit of green in your meals, then spinach adds that splash of colour even where you might least expect it (oatmeal). Spinach makes a great addition because as BBCgoodfood.com says:

"Spinach is also an excellent source of vitamin K, vitamin A, vitamin C and folate as well as being a good source of manganese, magnesium, iron and vitamin B2. Vitamin K is important for maintaining bone health and it is difficult to find vegetables richer in vitamin K than spinach."

Full of vitamins, minerals, AND good for bone health? Well, say no more!

Here's the recipe I used:

70 grams no fat greek yogurt (plain)

1-2 handfuls of spinach (I used baby spinach)

Blend up with 1 cup water, 1/4 tsp salt and 2 tablespoons of peanut powder

Then to the mixture add:

1/3 cup of oatmeal

1-2 tsp chia seeds

Give it a try and see what you think!
