Carrots 'n oats

I've written before about my passion for pureeing beets into my morning oatmeal as a way of increasing the amount of vegetables I get in my diet each day. This week I was up for a change and decided to try out carrots. How are carrots pureed up in oatmeal you ask? I'd say they are definitely a hit! You might think carrots would have to be cooked in order to puree well, but I found that my trusted nutri-bullet does a fab job of pureeing up pretty much everything, even raw carrots chopped up pretty roughly. So, here is this mornings oatmeal recipe:
1 bright orange carrot (sliced up as much as you need for your blending tool)
70 grams of plain 0% greek yogurt
2-4 tbsp peanut butter powder
1/4 tsp salt
Puree all of this up with about 1 cup water, then add in the following:
1/4 cup oatmeal
1-2 tsp chia seeds
any spices/flavours you might care to add - cinnamon? vanilla? cocoa powder?
Put the lid on and shake it all up! I like to let mine sit in the fridge overnight and then cook it up quick in the morning. This doesn't have quite the shock of colour that you get from the beets, but it is every bit as tasty (and a good deal less messy too!)
