Tortilla Soup with Plant Based Proteins

Not being a real meat eater (although I do eat fish like salmon and tuna), I love finding ways to exchange out meat ingredients for something plant based but still a strong protein source. Today my new recipe trial was Tortilla Soup. The original recipe called for ground turkey or beef, so I decided to try out seitan again as the meat replacement. (Check out the earlier blog for the recipe for making seitan).

Here's the soup recipe (thanks to slenderkitchen.com for the original recipe)

1/2 cup onion stir fried with 2-3 cloves of crushed garlic in a good stock pot. Once they are lightly browned add in:

6 cups veggie broth

1 can stewed tomatoes

400 grams of seitan

1 can spinach

1 can white beans

1 package spinach and cheese tortellini (I used Buitoni - the 9 oz package)

Spices to taste.

Heat it all up, add some parmesan cheese on top of each bowl and enjoy! I think you'll find this soup just as satisfying as can be.
