All Vegetable Meals

We love sweet potatoes. Pretty much anyway you care to prepare them - mashed, roasted, steamed, crock-potted...they make a delicious dinner no matter how they are prepped. Whenever our eating has been off-schedule, heavier than usual, or less than ideal in some way or another, the sweet potato dinner is always our go-to! Easy, nutritious and light. Knowing that with the holidays coming up we'll be out of our usual eating patterns, we opted for some simple sweet potato based dinners for this weekend. Tonight's dinner - sweet potato cooked whole in the crock pot, topped with stir-fried spinach, sun-dried tomatoes, mushrooms and seasoned tofu, with a side dish of cauliflower and broccoli. All vegetable and all good! Lots of vitamins and minerals in this meal, a good dose of dietary fiber, and some top quality plant based protein. Can't go wrong with that :)
