Plant based protein & Turkish lentil stew :)

Plant based eating is a popular topic that you see everywhere. The typical question people wonder about when eating more plant based is "Where do I get my protein from?" For plant based eaters, beans and legumes are pretty common sources, along with nuts, seeds, soy and grains. One of my favourite plant based sources of protein are lentils. I love the way the cook up so easily, have tons of variety in colour and texture between the different types and take on the flavour of any kind of spice you choose to use. Lentils contain about 9 grams of protein for every 1/2 cup of dry, and are also full of fiber, meaning they have a great satiety effect. To get a complete protein (most plant based proteins are not complete), just pair the lentils with a wheat, rice or corn source and voila! Complete protein. The recipe for this gem of a soup:

2 cups dry red lentils

1 white potato

1 sweet potato

2 medium carrots

6-8 cups of broth (depending on how thick you like your soups)

1 TBSP tomato paste

Spices - tumeric/curry/cumin...whatever grabs you!

Cook it all up, and puree it before serving.
