Favourite Foods, Soup this time!

Soup is a pretty standard meal in our house. Both my husband and I love a good, warm, hearty soup that leaves you feeling nourished and satisfied. Lately we've been doing a lot of soups with a coconut milk/broth base, but today we went back to an old favourite, a recipe I originally got from Precision Nutrition and one which I've tinkered with a bit over time.

The soup is African Peanut Soup. It's ingredients are pretty simple - onion (if you have it, today I didn't, and it turned out fine), butternut squash (isn't BN Squash pretty much the best no matter how you use it??), peanut butter (unsweetened), tomato paste, garlic, spices and chickpeas. Thick and delicious, this soup works well with quinoa (or bread, rice etc) and some greens - (maybe a salad or some broccoli) and you've got yourself a fabulous dinner!

Here's the recipe:

1/2 yellow onion well chopped

3 cloves of garlic

4-5 cups of cubed uncooked Butternut Squash

1/2 tsp cumin

1/4 tsp coriander

1 cup broth to get it all cooking.

Once the squash is starting to soften add:

4 more cups of vegetable broth

1/2 cup smooth natural peanut butter

2 TBSP tomato paste

1 1/2 cups cooked chickpeas

salt to taste if needed.

This soup cooks up really quickly (30 minutes - but more cooking time allows the flavours to enhance) and makes around 6 servings. Hope you test it out! If you do, drop me a note to let me know how it was.
