Saturday Morning Routines

I love routines. (Probably too much.) One of our favorite weekly routines is Saturday morning pancake breakfast. This normally follows my weekly Saturday "Long Run" - which lets me feel OK about all the calories I'm about to indulge in!

So how do you make this great routine one that supports your nutrition and doesn't derail it? Let's face it, it isn't too hard to go wrong on pancakes when you consider all the "extras" loaded on to a pretty refined product to start with. So - start with something nutritious as your batter!

Two of our fave recipes are:

Banana Pancakes (modified from "Crazy Plates")

1 cup oats and 1 cup whole wheat flour

1/2 tsp salt, 1 tsp b. soda, and 1 1/2 tsp b. powder

2 cups buttermilk (or your own sour milk recipe)

1 egg, 1 TBSP honey, 2 TBSP melted butter

1-2 ripe bananas (enough to mash up into 1 cup)

Vanilla/cinnamon/cocoa - choose your fave - 1 tsp

Add wet to dry and cook it on your best flat pan!

*Sprinkle dry oats on top of cooking pancakes, to give a crispy texture.

Pumpkin Pancakes (modified from Jessica in the kitchen) https://jessicainthekitchen.com/gluten-free-pumpkin-pancakes-recipe/

1 1/4 cups oat flour (just grind up oats in your bullet), 1/2 tsp salt, 1 tsp b. soda, and 1 1/2 tsp b. powder

1 cup milk (or milk substitute), 1 egg, 1/2 cup pumpkin , 1 TBSP warmed honey and

2 TBSP Labneh or greek yogurt (regular yogurt would work too, just gives a little less protein)

Vanilla/cinnamon/cocoa - choose your fave - 1 tsp

Add wet to dry and cook it on your best flat pan!

Sprinkle dry oats on top of cooking pancakes, to give a crispy texture.

To top it off add fresh berries, nuts, banana, seeds... whatever suits your taste buds Saturday morning! Also, try using powdered peanut butter mixed with a bit of water to make a protein rich and delicious peanut buttery syrup! (Truth be told, I haven't actually tried this syrup yet, but read about it today and it sounds like it could be a WONDERFUL addition to our Pancake practice!!)
